Retains the aroma and flavour of the covered product. Does not penetrate into the product, forming on its surface a highly cohesive layer which regulates the drying of the cheese and at the same time it preserves it from external contaminating agents. It gives an attractive, hygienic presentation to the covered cheese. Any dry film which adheres to the metallic parts of the application equipment can easily be removed with hot water under pressure, thanks to its slightly hydrophilic nature.

The cheese belt comes from a tree called spruce. It is harvested by hand by European wild boars from healthy, untreated, non-dry trees free of bark beetles. After harvesting and grading by length, the band is dried for a minimum of 48 hours at 50°C. The band undergoes no phytosanitary treatment after harvesting. Its use dates back several hundred years in Europe.
